@kenjilopezalt, sorry if you’ve written about this somewhere, but do you have an opinion on importance/skippability of アク取り (scum skimming) when making Japanese curry (using boxed roux)? I do it sometimes—as my mother-in-law taught me—but not always. 🙏🍛
