@SHamiltonian I’m not following this carefully, but could the take up by eg multiestablishment chain restaurants actually have increased VERY rapidly? “Any business with a NAICS Code that begins with 72 that has more than one physical location and employs less than 500 per location”

@SHamiltonian Not sure it gets there! QWI gives total NAICS 72 (Accommodation and Food Services) payroll for 2017 as $294B (of which $171B is *firms*—not estabs—with <500 employees). ⇒ 2.5 month payroll for ALL 500+ employee N72 firms would still be just $26B. ledextract.ces.census.gov/static/data.html
