@Andrew___Baker If a recipe calls for two shallots, use four or five of the big level-0 shallots. You’ve never once eaten anything and said “oh man this has too many shallots in it,” plus the permanent income hypothesis.

@Andrew___Baker To be clear I am a fairly non-improvisational cook, fundamentally a recipe-follower except for a pretty consistent “always double the scallions and olives” rule
