      @Ben_Uchiyama With due respect to cookdo and Japanese-style mapodofu, you are very, very much missing out. I recommend @fuchsiadunlop’s recipe; we cook the version in her Land of Plenty cookbook (which doesn’t have garlic and ginger lime the one @SHamiltonian likes) and prefer pork to beef @SHamiltonian/1159982341529513985

    @Ben_Uchiyama @fuchsiadunlop @SHamiltonian Also tbc this is not like カレー🍛 where making “from scratch” would be unusual or particularly difficult. (We always used boxed roux.) Legit mapo is pretty straightforward once you have a few critical ingredients.
